Luis Rojas opened Quattro's over 20 years ago, bringing award-winning Italian flavors to Guilford and the shoreline communities. Luis moved to the United States in 1989 as a teenager and soon found a love for culinary arts. Starting from the ground up as a dishwasher, he began his professional cooking career at Dante's in Hamden, CT.
